Puffed rice shaken in a tin can with mustard oil, chopped onion, green chilli, coconut slivers, chanachur and a squeeze of lime. It is made in front of you in about twenty seconds, sold in a paper cone, and eaten immediately.
The mustard oil is what separates it from Mumbai’s bhel. It is raw, sharp and unmistakable.

- Raw mustard oil is the point. If it is missing, it is not jhalmuri.
