Phuchka, Kolkata

The Kolkata form of the water-filled crisp shell, with its own tamarind filling.

The Kolkata version of the puri filled with spiced water: the shell is darker and made with atta as well as suji, the filling is mashed potato with black salt and tamarind rather than chickpea, and the water is sharper and more sour than Mumbai’s pani puri.

The last one is given free, dry and stuffed, and is called the fau. Ask for it.

Worth knowing

  • Ask for the fau — the free dry last one. It is traditional.
  • Kolkata phuchka is more tamarind-sour than Mumbai pani puri, and the filling is different.
  • Go where the turnover is high; the water should be fresh.
  • Six to eight is a portion. Nobody stops at six.
