Kebabs taken off the skewer — the kathi — and rolled in a paratha, so that a clerk could eat them walking without a plate and without greasy hands. Nizam’s in New Market is credited with it, some time in the 1930s or 40s. The egg coating on the paratha came later.
It is now sold in London and New York under the Kolkata name, which is unusual for an Indian street food.

Worth knowing
- Double egg double mutton is the standard order.
- The vinegar-soaked onion and the green chilli are part of it, not garnish.
- Ask for it without the egg coating if you want the original form.
- It is eaten walking. That is what it was designed for.
