Kolkata eats differently from the rest of India, and it knows it. The sweet shops are older than anywhere — several founded before 1850 and still run by the same families. The biryani has a potato in it because a deposed Nawab’s kitchen had to stretch the meat. Indian Chinese food was invented in the tanneries at Tangra. The kathi roll was invented at New Market. The cabin and the pice hotel exist in no other city.

Worth knowing before you go
- The oldest sweet shops are in north Kolkata; the newer Bengali restaurants are in the south
- Nolen gur season is roughly December to February and changes the whole sweet trade
- Hilsa season is roughly July to September; that is when the fish cooking is at its best
- Durga Puja, in September or October, changes how and where the whole city eats
- Territti Bazar’s Chinese breakfast runs from about six to eight in the morning only
- Chhana sweets do not keep. Eat them the day they are made.
