Burrabazar is a Marwari trading district and has been since the nineteenth century, so central Kolkata has a substantial pure-vegetarian kitchen economy that has nothing to do with Bengali food. Kachori, sabzi, thali, and a heavy sweet trade run alongside the wholesale business.
Bengali vegetarian food is a separate thing again: the widow’s kitchen of the old households, cooked without onion or garlic, is where dishes like shukto and dhokar dalna come from, and it is some of the most refined vegetarian cooking in India.
