Kolkata is the gateway to Darjeeling, Sikkim and the hill districts, and the food came down with the people. Momo is now as common on Kolkata streets as the roll, sold from steamers on pavements across the city. Thukpa, thenthuk and Tibetan bread follow behind it.
Nothing here is very old — most of it arrived after 1960 — but it is now genuinely part of how the city eats.
